We rely upon carefully sourced local ingredients provided to us from our farms, fishermen, and artisanal producers. Our relationships with these individuals stretch back years, which means that we acquire the finest on offer, in season, and with care. Our approach is Japanese: Regard the food as a pathway to the environment; keep it simple and natural, and you’ll taste what is on the plate the way it is supposed to taste in nature.

About our wines and sake
Our Japanese sake and French wines enhance the flavors of our food. Our sommelier is happy to help you pair these with your dining choices. Spring brings about fresh sake that is brewed with Kaga’s snow-fed water. In autumn, champagne is a delight. All year, wine or sake stimulate our senses.
