Cuisine and Conviviality,
Experiences and Memories of Japan
Nestled in the mountains of Kaga,
surrounded by snow fed rivers,
and situated in our famous hot springs village...
Japanese ingredients prepared with French techniques. Where guests feel like regulars on their first visit. A journey through food and hospitality that creates stories for guests to remember of dining in Japan with friends and family.
We rely upon carefully sourced local ingredients provided to us from our farms, fishermen, and artisanal producers. Our relationships with these individuals stretch back years, which means that we acquire the finest on offer, in season, and with care. Our approach is Japanese: Regard the food as a pathway to the environment; keep it simple and natural, and you’ll taste what is on the plate the way it is supposed to taste in nature.
The Cuisine at Enuma Station
Above all, we show respect for the land and sea through our preparation and presentation of the products. We want people to enjoy dishes that are satisfying enough to create lasting memories. Seasonality, focus, and attention to detail are our gold standards.
Spring, Summer, Fall Winter
Each time of year offers blessings and bounties from the sea and earth. Our favorite menus from each season, always changing according to the markets and season...
About our wines and sake
Our Japanese sake and French wines enhance the flavors of our food. Our sommelier is happy to help you pair these with your dining choices. Spring brings about fresh sake that is brewed with Kaga’s snow-fed water. In autumn, champagne is a delight. All year, wine or sake stimulate our senses.
Our menus depend on market availability, and changes in each season.*Please let us know in advance of any food allergies.
Consuming raw or undercooked eggs, beef, lamb, milk products, pork, poultry,
seafood or shellfish may increase your chances of foodborne illness.
